When you call yourself a “know it all” you better be able to back it up. A “know it all” knows, well… it all! Normally my blog posts are on topics such as politics, entertainment, sports, etc. But today I am going to share with you the most amazing chocolate chip cookie recipe in the entire world. This recipe isn’t the easiest but it is the best chocolate chip cookie recipe in the world. Therefore without further ado lets get started.
You will need the following ingredients:
2 cups flour (1/4 cup less if not in high altitude, like I am)
1/2 t. baking soda
14 T. butter (divided)
1/2 c. granulated sugar
3/4 c. packed dark brown sugar (not light brown!)
1/2 t. salt (1 t. if using unsalted butter)
1 T. vanilla
1 large egg
1 large egg yolk
1 1/3 c. bittersweet chocolate chips (60%)
Remember for the best results get Ghirardelli 60% cacao bitter-sweet dark chocolate chips because these cookies are somewhat sweet so the bitter dark chocolate perfectly off-sets the sweetness of the cookie.
The first step is to heat the oven to 375 degrees. Line 2 baking sheets with parchment paper (you’ll be glad you did-less mess, and no sticking to the pan!). Mix flour and baking soda, set aside.
Next, heat 10 T. of the butter in a skillet over medium-high heat until melted. Continue cooking, swirling the pan until the butter is dark golden brown and has a nutty aroma, 1-3 minutes (will be foamy and lighter on top, so watch when swirling and look under foam for golden color).
Remove from heat and transfer to mixing bowl using a rubber spatula. Stir in remaining 4 T. butter until completely melted.
Add sugars, salt, and vanilla to bowl with butter and whisk until fully mixed. Add egg and the egg yolk and mix til smooth, about 30 seconds. Remember, you are adding a full egg and also an additional egg yolk.
Ok, here is the twist, this is important, so don’t skip this step! Let mixture stand for 3 minutes, then mix on low for 30 seconds. Repeat this process 2 more times until mixture is thick, smooth, and shiny. (Weird, huh?)
Stir in flour mixture, just until combined, about 1 minute. Stir in chocolate chips.
Using a large cookie scoop or an ice cream scoop, drop onto cookie sheet. I do 6 at a time. These should be big, about 3 T. of dough per cookie. Trust me, this will make them crispy on the outside, and gooey on the inside.

Bake until golden brown, about 10-14 minutes. Rotate pan halfway through baking to ensure even cooking. Cool on wire rack. Eat, enjoy, make a mess!
